Strawberry Cupcakes with Crust

Ingredients (makes 8 regular sized cupcakes)

For the crust and batter: 

  • 60g unsalted butter, divided
  • 80g cookie crumbs
  • 90g extra fine sugar
  • 2 eggs
  • 65g self-rising flour
  • 60g plain flour
  • 1/2 teaspoon vanilla
  • 65ml milk
  • 100g strawberries, chopped

For the icing:

  • 100g cream cheese
  • 50g unsalted butter, softened
  • 50g powdered sugar
  • 1/2 teaspoon vanilla
  • 2 tablespoons of mashed strawberries
  • extra strawberries for decorating

Instructions

  1. Preheat oven to 160ºC and line your cupcake cases/tins.
  2. Melt 3 table spoons of butter and mix it with the cookie crumbs.
  3. Add a spoonful of the cookie crumbs & butter mixture in each cupcake case and put them in the oven for about five minutes until the crust gets slightly darker brown color.
  4. In a separate bowl mix the flours together and in a glass or small jar mix the vanilla in the milk and set them aside for now.
  5. Place the remaining butter and extra fine sugar in your mixer and beat on medium-high speed about 5 minutes, until you got fully incorporated creamy mixture.
  6. Add eggs – one at time, beating two minutes on medium high speed after each addition.
  7. Turn the beating off, sift your flours in the foamy mixture and pour in the milk.
  8. Beat it with slow-medium speed for about two minutes, until fully incorporated.
  9. Add your chopped strawberries and slowly fold them in with a spatula.strawberrycupcakebatter
  10. Spoon batter into lined cupcake cases over the crust , filling a bit over halfway up.
  11. Bake for approximately 25 minutes, until a toothpick inserted into middle comes out clean.
  12. Let the cupcakes cool down completely on a wire rack then prepare your icing.

Strawberry Cream Cheese Icing

  1. Place the cream cheese, softened butter, powdered sugar and vanilla in a mixing bowl and start beating on low gradually increasing the speed and mixing until fully incorporated and smooth.
  2. Mash the strawberries and mix into the icing by folding with a spoon or spatula.
  3. Place the icing in a piping bag and pipe some on top of each alternatively you can add some on top with spoon and spread it on the top.
  4. Decorate with some additional strawberries.
