Ingredients (makes 12 muffins)

  • 2 eggs
  • 70g plain flour
  • 50g white oats
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground cardamom
  • 50ml milk
  • 1 teaspoon vanilla
  • 80g unsalted butter, melted
  • 125g whole dried blueberries

  1. Preheat oven to 180 C and line 12-cup muffin pan with cupcake cases
  2. Place eggs in a mixing bowl and beat on medium high speed for 5 minutes
  3. Meanwhile in a separate bowl mix flour, oats, baking powder and salt then incorporate with the eggsSugar Free Blueberry Muffins
  4. Add milk and vanilla and beat on medium speed for a minute then add butter and finally blueberries and mix using a spatula or a spoon.
