Sugar Free Kiwi Mousse

Sugar Free Kiwi MousseSunGold and Green Kiwis – ah what a bliss. I had written kiwifruits to our grocery list and to my surprise found both yellow and green and it pretty much made my day. 🙂

This dessert is not only healthier because it’s free of refined sugars, but thanks to the kiwifruit it’s packed with nutrients such as Vitamin C, E and dietary fiber. I found a good article about the nutrients in both green and gold kiwifruits at Livestrong.com.

Following my recent visit to Finland and a mini holiday in Eilat, South Israel, I have recently been posting less but I’ll try to pick up by end of next week. Happy sugar free Sunday!

Ingredients
  • 2 kiwi fruits yellow/green, peeled
  • 1 tablespoon granulated stevia
  • 1/2 teaspoon pure gelatin powder
  • 1 tablespoon water
  • 100 mililiters heavy cream
  • 1/2 teaspoon vanilla seeds
  • 20 grams mascarpone cheese

Instructions
  1. Puree one kiwi or half of yellow and half of green kiwi.
  2. In a small saucepan combine stevia, gelatine and water and cook over medium heat until gelatine dissolves. Remove from heat and mix with pureed kiwi.
  3. In a mixing bowl beat cream and vanilla until soft peaks form, then add mascarpone and beat until incorporated. Fold the pureed kiwi-gelatine mixture in.
  4. Slice the remaining kiwi to small pieces and place some in bottom of your serving dishes, spoon or pipe mousse on top then add a few more pieces in middle before filling the dishes.
  5. Repeat the layer and refrigerate for at least 4 hours before serving.
