Thanksgiving Chocolate Turkey – This one is for all my American friends, wishing you a Very Happy Thanksgiving!
I never celebrated thanksgiving myself but after seeing pictures of dozens of cute turkey cake pops and mini cakes with their adorable candycorn tails, all over the internet, I could not resist making a turkey themed cake.
And here it is, tail from dark chocolate, sugar sprinklers and white chocolate, chocolate cake mixture of cocoa cake and whipped cream cheese icing covered in dark chocolate, sugar eye ball decorations, sugar and chocolate sprinkles and red icing gel.
Draw tail on baking paper/ parchment paper and place on a plate. Melt 100 grams of dark chocolate and prepare red, orange and yellow sugar sprinkles.Place chocolate in piping bag and pipe filling outlines of the tail and design.Fill the holes with sugar sprinkles and use remaining chocolate for second layer over the outlines and rest filling the bottom part.Melt 60 grams of white chocolate and cover the sugar sprinkles and any holes on the bottom part. Refrigerate for 8 hours or over the night.Shape head and body from chocolate cake mixture (recipes in end of this post)
Prepare the decorations and melt 150g of dark chocolate.Insert a lollipop stick into the head ball and dip it into melted chocolate.
Quickly before the chocolate dries apply eyes, yellow sugar sprinkles for beak and chocolate sprinkles on top of the head. By using red icing gel draw a small wattle from top of the beak.Place the big chocolate cake piece on a plate and pour the remaining chocolate, make sure it will be fully covered and use a spoon to spread if necessary. Attach the head and tail.Hold the tail for couple of minutes until it strongly stands attached from bottom and the back of the cake.Add sprinkles around.The chocolate will dry faster if refrigerated. The chocolate cover keeps the cake fresh for days, so you can make this in advance and keep refrigerated until approximately 30 minutes before serving so it won’t be too hard to cut.Enjoy!
Chocolate cake mixture used for this cake is mixture of crumbled cocoa cake and whipped cream cheese icing.

Ingredients
220gramsplain flour
200gramswhite granulated sugar
50gramscocoa powder
1teaspoonbaking powder
1/2teaspoonbaking soda
1/2teaspoonsalt
1teaspoonvanilla extract
80mililitersheavy cream
1egg
100mililiterswaterhot

Instructions
Preheat oven to 180°C and lightly grease a 20cm cake tin/ ring cake tin.
In a mixing bowl combine all dry ingredients.
Add egg, cream and vanilla and mix well.
Stir the hot water in and mix until fully incorporated then pour into the cake tin and bake for 25-35 minutes, until a toothpick inserted in middle comes out clean.
Recipe Notes
Used in cake pops, mixed with 100 grams of cream cheese icing this cake makes 40-50 cake pops.

20gramsunsalted buttersoftened
200gramspowdered sugar

Instructions
Place cream cheese, butter and half of the icing sugar in a mixing bowl and start beating gradually increasing speed to medium high, mix for a minute until smooth.
Add remaining powdered sugar and beat until fully incorporated and smooth and creamy.
