Wholesome Cheese Buns

Soft, wholesome and cheesy buns with poppy seeds on top! I’m a huge cheese lover and I like my bread wholesome and dark. These buns are great at any meal but especially as a light dinner served with salad or vegetables or on a cold night with a bowl of warm soup.

I used a mix of Cheddar and Emmental cheese in the filling, but any medium hard to hard cheese will do. You may want to add some grated cheese on top too or substitute poppy seeds with sunflower seeds. The cheese hardens as the buns get colder so make sure you serve them warm. Enjoy x

Ingredients
  • 500 mililiters water lukewarm
  • 2 tablespoons dry active yeast
  • 1 tablespoon maple syrup
  • 2 teaspoons salt
  • 50 grams unsalted butter melted
  • 200 grams whole wheat flour
  • 200 grams oat flakes
  • 200 grams oat bran
  • 100 grams plain flour
  • 185 grams medium hard cheese cheddar/emmental
  • 20 grams poppy seeds
  • 3 tablespoons water

Instructions
  1. In a mixing bowl dissolve yeast in lukewarm water and add salt and maple syrup.
  2. In a separate bowl combine flours, oat flakes and oat bran and add gradually to the yeast mixture while slowly mixing.
  3. Add melted butter and knead for few minutes until soft and elastic.
  4. Cover the bowl and leave to rise for 1/2 hour.
  5. Preheat oven to 225ºC (430ºF) and prepare a baking sheet with parchment paper.
  6. Cut the cheese into 10 cm (3.9 inch) sticks.
  7. Turn the risen dough on a lightly floured surface, knead a bit and divide into 12 pieces.
  8. Flatten a piece with your hand, place cheese stick in middle and fold the sides to cover it. Shape into oblong shaped bun.
  9. Repeat for the remaining while keeping the ready buns covered with a tea towel.
  10. Brush the buns with water and sprinkle with poppy seeds.
  11. Bake in preheated oven for 12 minutes and serve warm.
