Cranberry and hazelnut cookies, made wholesome with whole wheat flour, reduced amount of brown sugar and oats, you could use whole grain oats instead of white, I just happened to have white at home when craving for a cookie!
Ingredients
- 100 grams unsalted butter
- 1 egg
- 50 grams dark brown sugar
- 1 teaspoon vanilla extract
- 100 grams whole wheat flour
- 20 grams coconut flour
- 30 grams white oats
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 50 grams dried cranberries
- 50 grams Hazelnuts chopped

Instructions
- Preheat oven to 180°C and prepare a baking sheet with baking paper.
- In a mixing bowl beat butter, egg, brown sugar and vanilla on medium high speed.
- In a separate bowl combine the flours, oats, baking powder and cinnamon.
- Stir the flour mixture into the butter & sugar mixture, mix until combined.
- Add cranberries and crushed hazelnuts and mix well.
- Shape into 12 round pieces, place on baking sheet and flatten by tapping with a spoon.
- Bake in preheated oven for 12 minutes,
place on wire rack and let the cookies cool down for few minutes.
