Wholesome Cranberry & Hazelnut Cookies

Cranberry and hazelnut cookies, made wholesome with whole wheat flour, reduced amount of brown sugar and oats, you could use whole grain oats instead of white,  I just happened to have white at home when craving for a cookie!

Ingredients
  • 100 grams unsalted butter
  • 1 egg
  • 50 grams dark brown sugar
  • 1 teaspoon vanilla extract
  • 100 grams whole wheat flour
  • 20 grams coconut flour
  • 30 grams white oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 50 grams dried cranberries
  • 50 grams Hazelnuts chopped

Instructions
  1. Preheat oven to 180°C and prepare a baking sheet with baking paper.
  2. In a mixing bowl beat butter, egg, brown sugar and vanilla on medium high speed.
  3. In a separate bowl combine the flours, oats, baking powder and cinnamon.
  4. Stir the flour mixture into the butter & sugar mixture, mix until combined.
  5. Add cranberries and crushed hazelnuts and mix well.
  6. Shape into 12 round pieces, place on baking sheet and flatten by tapping with a spoon.
  7. Bake in preheated oven for 12 minutes, place on wire rack and let the cookies cool down for few minutes.
