Crunchy Oat, Almond, Cashew and Blueberry Bars

I’ve recently started eating nut and muesli bars every now then and often find store-bought bars too sweet.

So my attempts here were not too sweet yet yummy bars. I did not get as even sized bars as I hoped but the flavor and texture came out nice. Whole dried blueberries are a nice addition in otherwise nutty bars.

Ingredients
  • 3 tablespoons honey
  • 1 tablespoon brown sugar
  • 25 grams unsalted butter
  • 100 grams white oats
  • 25 grams ground almonds
  • 30 grams natural almonds chopped
  • 30 grams natural cashew nuts chopped
  • 30 grams whole dried blueberries
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions
  1. Preheat oven to 180ºC and line a 10x20 baking dish with baking paper.
  2. In a saucepan combine honey, sugar and butter, and heat over medium heat, stirring until the butter melts and sugar dissolves. Bring to boil and continue cooking until the syrup thickens slightly.
  3. In a separate mixing bowl combine remaining ingredients, mix well.
  4. Combine with the hot syrup and mix until incorporated.
  5. Spoon the mixture into baking pan, gently pressing with back of a spoon.
  6. Bake for 30 minutes, until golden brown. Allow to cool completely, then cut into 6 pieces and serve/wrap for serving later.
