Crisp choux pastry this time in form of eclairs filled with matcha whipped cream and topped with a generous amount of white chocolate glaze dusted with earthy matcha green tea powder dust and a little white chocolate and gold dust detail.
Matcha has a very unique rich taste, bitterness of green tea with sharp vegetal taste and sweetness. I like to pair it with sweet white chocolate to balance the earthiness. The flavour also works beautifully with sweet whipped cream with a little vanilla. If you are new to the flavour, I suggest you add the tea powder in small additions tasting the flavour between additions and adjust the recipe into your liking!
The glaze and how it’s piped on these may look like ganache but it’s shinier and spreads smoothly should you decide to spoon it on and spread using a spatula. Just make sure you work with it while it’s still warm. If you want to make the glaze green, simply add the matcha powder together with milk and corn syrup and it will blend in the mixing.
Hope you enjoy making these pastries at home! And if you do try this recipe, please let us know how it worked for you. I’d also like to hear about the different brands of matcha green tea powder you may have tried. Let me know in comments or drop me an email at [email protected] TIA xxx
