Peanut Bars with Dark Chocolate & Goji Berries

Quick and simple no-bake snack bars with few simple ingredients; peanuts, unsweetened dark chocolate, goji berries, peanut butter and honey.

Make sure to refrigerate for few hours before cutting as they do break easily when the chocolate is still soft.

Ingredients
  • 50 grams goji berries
  • 125 grams roasted peanuts
  • 100 grams unsweetened dark chocolate melted
  • 2 tablespoons peanubutter
  • 1 teaspoon honey

Instructions
  1. Line a 10x20 baking dish with aluminium foil, then pour 2/3 of the melted chocolate in and cover the bottom and about 1 cm on the sides.
  2. In a small sauce pan melt peanut butter and honey over medium heat, and mix until incorporated.
  3. In a mixing bowl combine peanuts and goji berries, then mix with the peanut butter mixture.
  4. Pour the mixture in the baking dish over the chocolate and spread evenly by tapping with back of a spoon.
  5. Use the remaining chocolate to drizzle on top.
  6. Refrigerate for at least 4 hours, then gently cut into bars.
