Ingredients
  • 100 grams unsweetened dark chocolate
  • 100 grams unsalted butter
  • 3 eggs
  • 3 tablespoons granulated stevia
  • 1/2 teaspoon vanilla bean
  • 1 tablespoon unsweetened cocoa powder
  • 50 grams self rising flour
  • 100 grams mixed frozen forest fruit

Instructions
  1. Preheat oven to 210°C and have all your ingredients ready to go before baking. You'll also need 6 regular sized muffin liners.
  2. Melt the chocolate and butter and set aside to cool down.
  3. In a mixing bowl whisk eggs, stevia and vanilla until pale and fluffy.
  4. Whisk in the melted butter and chocolate.
  5. Sift in the flour and cocoa powder and mix until incorporated and smooth.
  6. Spoon batter into muffin cups filling 1/3 full and place a few frozen berries in each cup.
  7. Cover the berries with remaining batter filling about 2/3 full.
  8. Bake in preheated oven for 12-15 minutes and lift on a wire rack to cool for fe minutes before serving.
