Strawberry Cream Puffs

A quick post before I’m off to a long walk on the beach with my husband and our doggie, Peach. This is my favourite time of the year, sun is up most of the days but it’s still a bit chilly, perfect outdoor weather and not too hot!

Another thing I love about this time of year is the variety of fruits in Israel. Citrus fruits are hitting their prime now and I’ll be using more citrus fruits in my upcoming recipes, just one more sugar free recipe with strawberries that are the yummiest right now!

Cream puffs with strawberries and coconut flakes, one of the messiest but so tasty and easy to make dessert.

My recipe calls for whole wheat flour, but you can replace it with plain flour. I simply ran out of plain flour and substituted partially by using the same amount whole wheat flour.

Ingredients
  • Choux Pastry Puffs
  • 80 grams unsalted butter
  • 180 mililiters water
  • 60 grams plain flour
  • 20 grams whole wheat flour
  • 2 eggs
  • Filling & Topping
  • 6-8 fresh strawberries
  • 40 mililiters whipped cream unsweetened
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons coconut flakes

Instructions
  1. Preheat oven to 175°C and prepare a baking sheet with baking paper.
  2. Place water and butter in a saucepan over medium heat, cook for few minutes until the mixture starts to boil.
  3. Add flour and stir until incorporated, continue stirring over low heat for 2 minutes.
  4. Let the mixture cool down for 2 minutes, then transfer to mixing bowl and add eggs one at time, beating on high speed.
  5. Place into a piping bag with large star tip.
  6. Pipe next to each other leaving around 2 cm in between on the baking sheet.
  7. Bake in preheated oven for 25 minutes.
  8. Let the puffs cool down for few minutes, then split by cutting with paring knife.
  9. Prepare whipped cream flavoured with vanilla and cut few strawberries into small cubes.
  10. Fill the puffs with cream and strawberries.
  11. Place thin cut strawberry slices on top with dap of whipped cream and sprinkle with coconut flakes.
